Exchanges such as Coinbase need ID and usually takes a week to get set up. If you dont want to pass on ID to an exchange you can buy cryptocurrency through sites such as LocalBitcoins where you make a bank transfer to a seller - peer to peer. For that you need to first have a wallet address set up to receive whatever coins you buy.

I use the Revolut app. No ID was required to sign up. From what i understand when you buy bitcoin via Revolut you cannot move that bitcoin anywhere else and you can probably get better rates elsewhere. But for ease of use i find it very easy, hassle free.

Ideally I'd like to buy with cash.

I'm told the way to collect bitcoins without ID is to send multiple emails pretending to have CAM videos of the recipient doing a five knuckle shuffle, and threatening to send it to all in that person's address book until he sends some bitcoins to an anonymous account which you control.
